Turkey and Spinach-Filled Lasagna Rollups

  • Ingredients:
  • 8 dry lasagna noodles
  • 1 pound ground turkey or chicken
  • 1/2 cup chopped onion
  • 1 (10-1/2 oz) package frozen chopped spinach, cooked and well drained
  • 1/2 cup water
  • 2 beaten eggs
  • 2 cups ricotta cheese
  • 3/4 cup mozarella cheese, shredded
  • 1 teaspoon dried thyme, crushed
  • 3 cups meatless spaghetti sauce
  • 3/4 cup finely grated Parmesan cheese

Method:

Cook lasagna noodles in a large pot of boiling water for 10 to 12 minutes. Drain well, rinse with cold water and drain again. Set aside.

In a large skillet cook ground meat and onion until turkey is no longer pink, crumbling meat with a fork as it cooks. Drain fat. Stir in cooked and well-drained spinach.

In a mixing bowl stir together eggs, ricotta, mozzarella cheese and thyme; stir in the turkey mixture. Divide filling mixture into 8 equal portions. Spread a portion over each lasagna noodle; roll up each noodle, starting with the short side. Place the filled rolls, seam side down, in an 11-7 inch baking dish. Spoon sauce over the rolls.

Cover the dish with foil and bake in a 375 degree oven about 30 minutes or till heated through. Uncover and sprinkle with the Parmesan cheese. Makes 8 main-dish servings of delicious Turkey and Spinach-Filled Lasagna Rollups.
