Tasty Spinach Quiche

  • Ingredients:
  • 1 (9-inch) baked pie shell
  • 1 (10 oz.) package frozen chopped spinach
  • 2 medium ripe tomatoes
  • 1/2 cup all-purpose flour
  • 2 1/2 tablespoons olive oil
  • 1 cup finely chopped onion
  • 4 slices Provolone or Mozzarella cheese, torn into small bites
  • 1 1/2 cups light cream
  • 2 eggs, well-beaten
  • 1 cup shredded Swiss cheese

Method:

Cook spinach according to directions on package, drain well and set aside.

Peel and slice the tomatoes 1/2-inch thick. Salt and pepper to taste and dip in the flour. Heat the oil over medium heat in a skillet and saute the tomatoes 3 to 4 minutes on each side. Remove and drain on papertowels.

Place the tomatoes and onions on the bottom of the baked pie crust. Mix the cooked, drained spinach with the Provolone or Mozzarella cheese and spread the mixture over the top. Mix the cream and eggs together. Pour into the pie shell. Sprinkle the Swiss cheese on top. Bake at 375 degrees for 35 to 40 minutes.

Let your Tasty Spinach Quiche stand on a cooling rack for 10 minutes to set before cutting.
