Spinach Triangles

  • Ingredients:
  • 2 tablespoons of butter
  • 8oz packet of frozen spinach, thawed
  • 3 finely chopped onions
  • 1/4 cup chopped shallots
  • 3 whole eggs, well beaten
  • 8oz Feta cheese
  • 1/2 tablespoon nutmeg
  • 15 sheets of filo pastry
  • 4oz melted butter
  • Seasoning of your choice (optional)

Method:

Saute the spinach, onions and shallots in melted butter in a frypan, then remove from heat.

Add the Feta, eggs nutmeg and your choice of season (if desired) to the frypan and beat well until all these ingredients are combined.

Divide pastry in half lengthways, then again fold each in half lengthways. Brush these with melted butter.

Add a tablespoon of the filling from the frypan on the end of a strip of pastry, then fold corner over to form the shape of a triangle. Continue folding over to the end of each sheet.

Repeat the above process with all the remaining filling and pastry.

Place onto baking paper, brush with butter, then bake for 20 to 25 minutes at 375 degrees F.

Makes approximately 30 spinach triangles.
