Spinach Surprise

  • Ingredients:
  • 1 pound of spinach
  • 2 tablespoons butter
  • 1/4 cup light cream
  • 1/2 tablespoon horseradish
  • Crumbled bacon
  • Hard boiled egg, well chopped

Method:

Cook 1 pound spinach. Drain, chop. Add 2 tablespoons butter, 1/4 cup light cream, and 1/2 tablespoon horseradish.

Heat (do not boil), and season to taste.

Garnish with crumbled bacon and hard-boiled egg.

Makes 3 serves of Spinach Surprise.
