Spinach and Sausage Stew

  • Ingredients:
  • 1 1/2 tablespoons olive oil
  • 1 large onion, diced
  • 1 pound Italian sausage, bulk style ( mild, sweet or hot)
  • 2 tablespoons tomato paste
  • 1/2 cup chopped fresh parsley
  • 1/3 cup cilantro, coarsely chopped
  • 4 cups chicken or vegetable broth (low-sodium)
  • 2 15 ouncs cans chickpeas, drained and rinsed
  • 1 10 ounce package frozen leaf spinach

Method:

Heat the oil in a Dutch oven over medium heat. Saute the onion until soft. Add sausage and brown. Crumbling with a fork, cook until no longer pink inside. Stir in the tomato paste and cook for 2 minutes before adding the parsley and cilantro.

Add the broth and chickpeas and bring to a boil.

Add the frozen spinach, reduce heat and simmer, partially covered, for 10 minutes. Stir occasionally with a fork to separate the spinach leaves.

Salt and pepper to taste and your Spinach and Sausage Stew is ready to serve.
