Spinach and Sausage StewReturn to Spinach Recipes Index
Method: Heat the oil in a Dutch oven over medium heat. Saute the onion until soft. Add sausage and brown. Crumbling with a fork, cook until no longer pink inside. Stir in the tomato paste and cook for 2 minutes before adding the parsley and cilantro. Add the broth and chickpeas and bring to a boil. Add the frozen spinach, reduce heat and simmer, partially covered, for 10 minutes. Stir occasionally with a fork to separate the spinach leaves. Salt and pepper to taste and your Spinach and Sausage Stew is ready to serve. |
