Spinach Salad with Ginger Dressing

  • Ingredients for the Spinach Salad:
  • 2 bunches spinach leaves, washed thoroughly, dried and well trimmed
  • 1 head romaine lettuce, washed and dried
  • 1 large sweet onion, sliced thin
  • Ingredients for the Vinaigrette Dressing:
  • 1/4 cup white wine vinegar
  • 1 tablespoon fresh minced gingerroot
  • 5 teaspoons curry powder
  • 1/4 teaspoon Tabasco
  • 3/4 cup olive oil
  • Garnishes:
  • 2 large Red Delicious apples, washed, unpeeled, and sliced in thin wedges
  • 1/2 cup raisins
  • 3/4 cup pecans

Method:

Combine the vinegar, ginger, curry powder, Tabasco, salt and pepper (to taste) in a small bowl with a whisk. Slowly stir in the oil until the mixture is well-blended. Cover and chill until ready to use.

In a large bowl, tear the spinach and romaine into bite-sized pieces. Add the onion, toss with the vinaigrette (reserve a little for the apples) and place on individual salad plates. Toss the apple slices in the vinaigrette and then place on top of individual salads. Sprinkle with raisins and pecans and serve at once.
