Spinach Salad & Dressing

• Ingredients:
• 1 1/2 pounds washed and trimmed fresh spinach
• 1 cup fresh mushrooms, sliced
• 1/2 pound cooked, drained and crumbled bacon
• 2 hard-boiled eggs, cooled and chopped
• 1 small can Mandarin oranges, drained
• 1 small, finely chopped sweet onion

• Dressing:
• 1/2 cup olive oil
• 1/4 cup wine vinegar
• 1 tablespoon sugar (may be omitted)
• 1/2 teaspoon salt
• 1/2 teaspoon paprika
• 1/4 teaspoon dry mustard
• dash black pepper
• 1/4 teaspoon celery salt

Method:

Tear spinach into bite-size pieces. Mix spinach, mushrooms and bacon, eggs and oranges in large serving bowl. Toss with dressing and serve immediately.

Dressing: Combine all dressing ingredients in jar with a lid. Shake thoroughly. Refrigerate until ready to use. Shake again just before pouring over the salad.

Your Spinach Salad and Dressing is now ready to serve.
