Spinach Manicotti (Spinach Pasta)

  • Ingredients:
  • 24 manicotti pasta
  • 2 quarts spaghetti sauce
  • 2 pounds ricotta cheese
  • 2 eggs
  • 3/4 pound mozzarella cheese, shredded (reserve 1/2 cup of it)
  • 1 teaspoon salt
  • 1/3 cup chopped parsley
  • 1/3 cup grated Parmesan cheese
  • 1 (10 oz) package frozen chopped spinach

Method:

Thaw and drain spinach. Pat dry and set aside. Par boil manicotti 5 minutes, 6 at a time in a large pot of salted boiling water.

In a large bowl, mix ricotta, eggs, mozzarella cheese, salt, parsley, Parmesan cheese and spinach. Fill manicotti shells with cheese mixture. Pour half the sauce in bottom of two 9x13 inch baking dishes.

Place shells in pans making sure they are covered with remaining sauce. Sprinkle with remaining mozzarella and Parmesan cheeses. Cover with foil and bake in a 375 degree F. oven for 30-35 minutes, or until cheese is melted.
