Spinach Cheese Squares

• Ingredients:
• 5 tablespoons butter
• 3 eggs
• 1 cup flour
• 1 cup milk
• 1 teaspoon salt
• 1 teaspoon baking powder
• 1 pound grated Monterey Jack cheese (or any white cheese)
• 2 packages frozen chopped spinach, thawed and well-drained

Method:

Oven: 350 degrees F 35 minutes. Preheat oven. Melt butter in oven in a 9x13 pan. Remove from oven, set aside.

In a large mixing bowl, beat the eggs, then add the flour, milk, salt and baking powder. Mix well. Add the cheese and thawed, drained spinach.

Pour all ingredients into baking pan and bake for about 35 minutes.

Remove from oven, let cool for 45 minutes while it gets firm. Cut into bite-sized Spinach Cheese Squares and enjoy !
