Spinach and Pork Roast

  • Ingredients:
  • 1 1/2 pounds lean pork roast, cubed into 1" pieces
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 12-ounce can tomato sauce
  • 1 12-ounce can water
  • 3/4 cup fresh parsley
  • 1 1/2 pounds fresh spinach, well washed and trimmed, chopped
  • 1 1/2 tablespoons lemon juice (if desired)

Method:

Heat oil in large skillet and brown pork and onions over medium-low heat for about 15 minutes. Transfer meat and onions to a casserole dish or small roasting pan and add tomato sauce, water, parsley and salt and pepper to taste.

Cover and bake in a 325 degree preheated oven for 1 1/2 hours or until meat is tender. Add spinach and lemon juice (if using) and bake for another 20 minutes.
