Spinach and Pork RoastReturn to Spinach Recipes Index
Method: Heat oil in large skillet and brown pork and onions over medium-low heat for about 15 minutes. Transfer meat and onions to a casserole dish or small roasting pan and add tomato sauce, water, parsley and salt and pepper to taste. Cover and bake in a 325 degree preheated oven for 1 1/2 hours or until meat is tender. Add spinach and lemon juice (if using) and bake for another 20 minutes.
