Method: In a 4-quart stock pot, preheat oil on medium heat and add carrots, onion and celery; saute 6-8 minutes, or until tender. Stir in cumin and cook another minute. Add tomatoes, broth, lentils, 2 cups water and salt and pepper to taste. Cover and heat to boiling. Reduce heat to low and simmer, covered 15 minutes. Stir in spinach and let stand until wilted.
