  • Ingredients:
  • 8 ounces linguine
  • 12 ounces fresh spinach leaves, freshly washed and stems removed
  • 8 ounces sliced mushrooms
  • 1 6 ounce jar marinated artichoke hearts, drained and sliced
  • 1 large can whole peeled tomatoes, cut into thin strips
  • 14 large pitted black olives, halved
  • 1 1/2 tablespoons olive oil
  • 2 cloves minced garlic

Method:

Cook pasta in salted, boiling water according to directions on package. Drain and set aside.

Place the wet spinach in a large skillet. Cover and cook over medium heat for a few minutes, just until wilted. Remove from the pan and drain.

Coat the same skillet with oil spray, add the mushrooms, and saute for 4 minutes.

Return the spinach to the skillet and add the artichokes, tomatoes and olives. Mix well. Drizzle the olive oil over the vegetables and stir. Add the cooked pasta to the vegetables in the skillet. Add the minced garlic and toss thoroughly. Serve your "Simply Pasta" immediately.
