Orzo Spinach Pie

  • Ingredients:
  • 1 1/2 Cups Rosmarino orzo (uncooked)
  • 2 Eggs, beaten
  • 1 15 1/2 oz. jar chunky spaghetti sauce or 2 cups of your own favorite sauce
  • 1/2 Cup grated Parmesan cheese
  • 1 10 oz. pkg. frozen chopped spinach, cooked and well drained
  • 3/4 Cup ricotta cheese
  • 1/4 Teaspoon ground nutmeg
  • 3/4 Cup shredded mozzarella cheese

Method:

Cook orzo according to package directions. Drain well. In a medium bowl, combine eggs, cooked pasta, 1/2 cup of the sauce and the Parmesan cheese. Grease a 9 inch pie pan. Spread this mixture over the bottom and sides of the prepared pie pan to form a shell. Mix spinach, ricotta cheese and nutmeg in a bowl. Spoon into bottom of pasta shell. Spread remaining sauce on top of filling.

Bake at 350 F. for 30 minutes. Remove from oven. Top with shredded cheese; return to oven for 3 - 5 more minutes, until cheese melts. Let cool on wire rack for at least 5 minutes before cutting.

Your Orzo Spinach Pie is now ready to serve to your family and dinner guests.
