Microwave Spinach with Honey-Soy Dressing

• Ingredients:
• 1 1/2 pounds fresh spinach leaves
• 1 1/2 tablespoons pure floral honey, warmed
• 1 1/2 tablespoons soy sauce
• 1 1/2 teaspoons toasted sesame oil
• 2 teaspoons toasted sesame seeds

Method:

Wash, drain and trim the spinach leaves. Place on a microwaveable dish. Cover the spinach loosely and microwave on high for about 2 minutes.

Remove from microwave and carefully squeeze out all of the excess liquid. (be careful, it'll be hot!)

In a screw-top jar, combine the honey, soy sauce, oil, and seeds. Shake well.

Pour the dressing over the spinach and gently toss well. Serve your Microwave Spinach with Honey-Soy Dressing immediately.
