Method: To make the chicken: Preheat the oven to 375 degrees F. Lightly coat a baking dish with the oil spray. Use the bowl of a food processer, fitted with a metal blade to combine the spinach, feta, tomatoes and cream cheese. Season with black pepper. Process until coarsely chopped. Slice open each chicken breast, lengthwise, to create a pocket for the stuffing. Fill the pockets with the spinach stuffing. Arrange the chicken in the baking dish in a single layer.
