Feta Spinach Salad

• Ingredients:
• 1 cup pecans halves
• 6 tablespoons extra-virgin olive oil
• 2 tablespoons white balsamic vinegar
• 1 1/2 tablespooons honey
• 1 pound spinach, tough stems removed, washed and patted dry; torn for salad
• 1 cup dried fruit (cranberries; cherries; or apricots) cut into small pieces
• 6 ounces feta cheese

Method:

Toast the pecans in a dry skillet over medium-low heat about 6 minutes; set aside

Make the dressing: combine the oil, vinegar and honey in a small bowl. Whisk until well blended. Season to taste with salt and pepper.

Combine the spinach, pecans and dried fruit in a large salad bowl. Toss to mix. Crumble the feta cheese into the salad, add the dressing and toss again. Serve your Feta Spinach Salad immediately.
