Chicken Breast Florentine

  • Ingredients:
  • 1 10 ounce package frozen leaf spinach with butter sauce in pouch
  • 2 whole boneless, skinless chicken breasts, cut in half lengthwise (or 4 cutlets)
  • 1/2 cup dry bread crumbs (seasoned or plain)
  • 1/2 teaspoon basil leaves
  • 2 tablespoons olive oil
  • 1 1/4 cups shredded mozzarella cheese
  • 1/4 cup white wine

Method:

Cook spinach according to package directions.

Pound chicken lightly to about 1/4 inch thick.

In a small bowl, combine bread crumbs and basil. Dip chicken in milk then coat with bread crumbs, pressing in firmly.

In a large skillet heat oil. Brown chicken on both sides over medium-low heat, cooking until tender. Add the white wine and simmer 6 minutes.

Evenly spoon cooked spinach on chicken and sprinkle cheese over top. Cover and cook over low heat until cheese melts. Makes 4 servings of Chicken Breast Florentine.
