Chicken Breast FlorentineReturn to Spinach Recipes Index
Method: Cook spinach according to package directions. Pound chicken lightly to about 1/4 inch thick. In a small bowl, combine bread crumbs and basil. Dip chicken in milk then coat with bread crumbs, pressing in firmly. In a large skillet heat oil. Brown chicken on both sides over medium-low heat, cooking until tender. Add the white wine and simmer 6 minutes. Evenly spoon cooked spinach on chicken and sprinkle cheese over top. Cover and cook over low heat until cheese melts. Makes 4 servings of Chicken Breast Florentine. |
