Blueberry Orange Spinach Salad

• Ingredients for the Salad
• 4 cups baby spinach leaves, washed and drained
• 2 medium navel oranges, peeled and diced
• 5 sweet onion slices, separated into rings
• 2 1/2 cups fresh blueberries

• Dressing
• 3/4 cup sour cream
• 1 1/2 tablespoons white wine vinegar
• 2 tablespoons crushed blueberries
• 1 teaspoon sugar
• 2 teaspoons lemon juice

Arrange spinach on salad plates.

Top with the orange slices and onion rings. Sprinkle with blueberries.

Combine dressing ingredients in a small bowl with a whisk until blended. Drizzle over salads.

Serve your Blueberry Orange Spinach Salad immediately.
