Baked Spinach Cheese Custard

  • Ingredients:
  • 1 3/4 pounds fresh spinach, thoroughly washed and tough stems removed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 eggs
  • 1 1/2 cups milk
  • 1 cup grated Gruyere
  • 1/2 cup grated parmesan

Method:

Bring a large stockpot of salted water to a boil. Stir in the spinach and cook until wilted, about 30 seconds. Drain well in a colander. Press out the excess moisture. Chop finely on a cutting board.

Heat the olive oil in a saute pan over medium heat. Add the onion and cook until softened, about 3 minutes.

Lightly grease a baking dish with oil.

In a large bowl, beat the eggs until smooth. Add the spinach, onions, milk, and Gruyere. Season with salt and pepper. Pour into the baking dish. Top with the Parmesan. Bake in a preheated 350 degree F. oven until the custard is set and a knife inserted comes out clean, about 30 minutes.

Let sit for at least 5 minutes before serving your Baked Spinach Cheese Custard.
