A1 Spinach and Artichoke Dip

  • Ingredients:
  • 2 cups (8 ounces) Mozzarella (shredded)
  • 1/2 cup sour cream
  • 1/3 cup Parmesan (grated)
  • 2 cloves garlic, minced
  • 1 (14 ounce) can artichoke hearts (not the marinated kind); drained and chopped
  • 2 (8 ounces each) packages cream cheese, room temperature
  • 1 (10 ounce) package frozen chopped spinach, thawed, well-drained and squeezed dry
  • Add salt and black pepper to taste

Method:

Preheat oven to 350 degrees F.

Set aside half of the Mozzarella cheese to be used later. In a large mixing bowl, combine the rest of the Mozzarella with the sour cream, 4 tablespoons of the Parmesan and the rest of the ingredients. Stir until well-blended. Transfer mixture into a 1 1/2 quart baking dish. Sprinkle with the remaining Mozzarella and Parmesan cheeses. Bake at 350 degrees for 30 minutes or until bubbly and golden brown.

Serve with tortilla or pita chips.

May be made using low-fat ingredients and your A1 Spinach and Artichoke Dip will be equally delicious !
